Stuffing Waffles with Poached Egg

Thanksgiving is over, let the Christmas holiday festivities begin! In My Kitchen is a monthly virtual meeting of bloggers from around the world who share what is happening in their kitchens. On to my kitchen, in my kitchen I have leftovers. Leftover stuffing to be exact. To my thinking stuffing is one of the best parts of the holiday meal. My contribution to my friends banquet was two kinds of stuffing. One was a traditional sausage stuffing with raisins, the other a vegan kale and caramelized onion stuffing. The leftovers made a delicious stuffing waffle and an eggy strata for brunch over the weekend.

In my kitchen I have an electric waffle maker, I’ve wanted one for years and finally broke down to purchase one.

It makes the “old fashioned” kind, not the thick Belgium waffles.

In my kitchen I have duck eggs.

They are larger and richer than chicken eggs. This is the first time I have seen them available in the grocery store, I usually have to purchase them at the Farmer’s Market near Oakland Chinatown.

In my kitchen I have gala apples, a gift from my friend Linda in Fort Bragg. The tree is in her yard. They were delicious and made the most wonderful apple sauce. Since it is the holidays I tossed in a few cranberries for color.

The relish was wonderful served with the Thanksgiving meal.

In my kitchen I have papewhite bulbs that I am forcing. They have the most amazing fragrance and should be blooming right around Christmas.

And lastly, in my kitchen I have sourdough starter. Or, I will have starter once it finishes drying. No pictures yet. If you would like some of my starter (Samuel, son of Priscilla), let me know and I will send you a package. Probably it’s best to confine this offer to the US.
