Thanksgiving is over, let the Christmas holiday festivities begin! In My Kitchen is a monthly virtual meeting of bloggers from around the world who share what is happening in their kitchens. On to my kitchen, in my kitchen I have leftovers. Leftover stuffing to be exact. To my thinking stuffing is one of the best parts of the holiday meal. My contribution to my friends banquet was two kinds of stuffing. One was a traditional sausage stuffing with raisins, the other a vegan kale and caramelized onion stuffing. The leftovers made a delicious stuffing waffle and an eggy strata for brunch over the weekend.

In my kitchen I have an electric waffle maker, I’ve wanted one for years and finally broke down to purchase one.

It makes the “old fashioned” kind, not the thick Belgium waffles.
In my kitchen I have duck eggs.

They are larger and richer than chicken eggs. This is the first time I have seen them available in the grocery store, I usually have to purchase them at the Farmer’s Market near Oakland Chinatown.
In my kitchen I have gala apples, a gift from my friend Linda in Fort Bragg. The tree is in her yard. They were delicious and made the most wonderful apple sauce. Since it is the holidays I tossed in a few cranberries for color.

The relish was wonderful served with the Thanksgiving meal.
In my kitchen I have papewhite bulbs that I am forcing. They have the most amazing fragrance and should be blooming right around Christmas.

And lastly, in my kitchen I have sourdough starter. Or, I will have starter once it finishes drying. No pictures yet. If you would like some of my starter (Samuel, son of Priscilla), let me know and I will send you a package. Probably it’s best to confine this offer to the US.

It’s true isn’t it? We are contributing to the microbiome of the planet. Priscilla came home to San Francisco since one of her “parent” cultures was San Francisco sourdough starter. Full circle.
Am loving the stuffing and also the duck eggs Liz…….hope the leftovers are still going strong!
All gone ;-( now. But there will be more at Christmas. Just time enough for my pants to fit again before my feasting.
Ha ha – I know the feeling – I am taking it easy this week (ie detox) to prepare for the indulgence of the next few weeks!

I don’t use my waffle iron enough (according to my children). I’m definitely going to be excavating from my cupboards to make a stuffing waffle though – genius.
They were very tasty, I’ve been exploring savory waffles and there are lots of opportunities other than breakfast.
I don’t get to have them often but just love to bake with duck eggs…Liz I’m especially jealous of your waffle machine but I’ve sworn off any more kitchen appliances…but I could possibly squeeze this in….Jan x
It is actually quite small 🙂 I get it though with the kitchen appliances. I have avoided a waffle iron for years. About 4 years ago I purchased a cast iron, stove top waffle iron. I thought it was a good idea, instead it was a complete waste of money. Everything stuck. With this electric one I had perfect waffles the first time. I’m anxious to try sourdough waffles since I am often discarding starter.

Leftovers were wonderful in the strata. I will post the recipe in a couple of weeks. There were several vegans and vegetarians at the Thanksgiving dinner we attended, it was very popular. I’m usually posting after I cook something, with holidays it puts me behind. But Christmas is coming and many folks have stuffing on the menu again, my personal favorite part of the meal and not something we eat very often.

Hi Liz, I hope you’re enjoying drying little trays of starter everywhere- your house propbably looks like mine. The cranberries look wonderful- might look into this one for Christmas to go with the Turkey and ham. And the Gala apple with yoghurt jumped off the page-hmm, perfect for my breakfast.
I do have trays of starter drying everywhere, it will probably be mixed with any wild yeast floating around in the air…evolving into some entirely new kind of starter. Should be interesting.
And the applesauce is very good with yogurt, my favorite breakfast or snack as well. The apples were so sweet I didn’t have to add very much sugar at all.
The applesauce looks so delicious and I love it with yogurt as well. I used to despise stuffing growing up but definitely enjoy it now. I have been wanting to make stuffing waffles but wasn’t at home with my waffle iron this year. I’m tempted to make stuffing for Christmas though. Spread the sourdough love, I certainly enjoy my Priscilla offspring!

I’ll lookout for those. We love our sourdough pancakes but haven’t tried sourdough waffles yet.
Goodness those stuffings look amazing. And the cranberries too. Yum. My kitchen is covered in little plates of drying sourdough starter at the moment now too… it’s lovely to see all these little Priscilla offspring spreading 🙂
Priscilla’s children are taking over the world.
She has been very prolific. I’ve been amazed at how resilient the starter can be. A couple of months ago I got very busy and forgot about it, after a day or so it was bubbling away again.
Love your blog, and I am looking for a new wafflemaker, the classic kind Isn’t this time of year the best, the kitchen is filled with wonderful aroma’s and jars of fruit it’s wonderfull.
I wanted a classic one rather than a Belgium because I like the crispness. Both are good though. And you are right, the kitchen smells wonderful with holiday spices and the paperwhites. They are just about to come into bloom.

Hello Ania, I just wish the paperwhites wouldn’t fall over when they bloom. I have tried everything including a weak solution of vodka. It did stunt their growth but also seemed to inhibit blooming. Is that something we heard growing up? Seems to me I hear a parental voice.

That stuffing waffle is brilliant. I am toying with the idea of buying a sandwich press with plates that cam be swapped for waffle irons… Cranberries are something we never see here (unless in a jar). They aren’t native and there is no real demand so they must remain a distant love affair.
all that lovely produce in your kitchen! and the waffle with duck egg looks delicious. it is getting harder and harder to get cranberries here. we don’t get fresh ones but frozen were available till last year when they stopped getting them in the supermarkets. thank goodness i snaffled some up this year as soon as i saw them. relish for Xmas dinner it is. merry Xmas to you and yours.
It’s the very off season for you isn’t it? The stores here have huge displays of them and I stock up. The rest of the year they are difficult to find, and then only in the frozen section.
I love crisp Belgian sourdough waffles but your stuffing version looks tempting enough to bake a small batch of stuffing for a trial run. Mmmmm, the fragrance of blooming paper whites is as much a part of the scent of Christmas as are the fresh evergreens. Inhale… Smile.

We love duck eggs and also stuffing. I make 2 as well for Christmas lunch, 1 inside the chicken and a spare. I have some Priscilla starter that I’m hoping to now get time to use in my new-old kitchen after we move. And I’m so tempted to buy a waffle maker. I think savory waffles for breakfast with a duck egg is a wonderful idea 🙂
